the way that dock is set up, looks like a good way to sprain an ankle.

Looks a little like it was made of pallets.

A lot of things can be made with pallets. Boats, planes and probably fishing docks aren't the best examples.

I have got about 100 pallets [mainly oak] ready to be taken apart to be used in our home.

hoping they have not been treated,

any pallet used outside the USA has to be treated for pest, IIRC

My wife wanted me to retrieve some barn wood from her father's horse barn before it was torn down and burned. I said sure honey, no problem. I soon realized that the whole structure was mostly made of pallets. I finally got about a half a pick-up load of actual oak lumber out of it, and made an area on the family room wall for her to display family pictures. At first I thought it was a bad idea, but now I see my grand children's pictures up there on their great grand fathers wood. No way to match that.

                        Nope, heat treated only.

I've recycled quite a bit of used lumber over the years when I noticed the "scrap" would easily suit my needs.
I used some clean pallets and leftover flooring to build a butcher block topped microwave cabinet. Pallets for the carcass and maple flooring for the top which included jatoba inlays. She's still using it after 30 years.
An oval picnic table salvaged from old decking including four radiused short benches.
Wrecking out a faux fireplace with built in bookcases I recycled the longer lengths into replacing some facia on my garage.
The same garage has French pane windows with frieze and matching service door frame. All constructed using packing crates from modular walk_in freezer panels.

The list goes on to include toy trucks and scooters etc. for my kids and nephews. Used scrap white oak to build a two wheeled truck for moving my tools from one job to another. That showed off I was a carpenter for over 25 years. Now that I'm retired I dismantled it this winter to get small pieces of aged oak for another upcoming project.

There is a certain feeling one gets from the extra work involved. Probably surpassed by harvesting your own tree, but that feeling is there.
