Co-worker has his uncles navy kbar, the leather handle and parts of the sheath are starting to deteriorate.

What the the best way to stop it from degenerating any more???

Pecards leather dressing is the best way to slow down the deterioration. Sad thing is that the old leather is in a constant state of deterioration, and we can only slow it down.
A friend has a very rare early Luger holster that had dried out over the past 110 years, and even though he carefully wrapped it in a towel, small bits of leather came off on the towel. He treated the holster with Pecards, and it is no longer shedding leather.
Don't use Saddle Soap, Neetsfoot Oil, or Mink Oil.
