he asked his boss one time, after his boss had a lengthy rant about the help disappearing after lunch on friday (the help was black, and they were in the hood, if they gave out paychecks early on friday's. the entire crew would go to lunch, cash the check, and start drinking, w/o coming back to work) why did he not hire some Asians?
he said that the Asians would take over,
meaning one or 2 hired would learn the job, and operation, then quit and open shop elsewhere and undercut the prices,

he said that to save money they would live in the building the bakery would use, use those savings to eventually expand and maybe buy a house or 2 for the extended family to live in,

there were a few Asian eateries on the customer list, and they had family living in the back rooms of the restaurants, often sleeping on top of the chest freezers or inbetween storage
