steak,, rare,, seasoned when cooked with just a bit of salt, and maybe a spash of Worcestershire, (only Lea & Perrins) but usually just salt
any cook temp on a steak above 120 degrees is wrong,,,
I have done some board sauces when grilling,
basically mix seasonal herbs (rosemary, thyme or similar) in butter and let it melt when you put the steak or meat (good with flank or skirt) on the board to rest, then slice
