    Saturday coffee Oct 25

    Another nice day is off to a good start. Coffee not made yet, but wifey or granddaughter can take care of that. Granddaughter not here yet - she works weekends and usually shows up around 1000. Wifey is a football fanatic, so I'm surprised she's not up already - game starts soon. I like to see them do well but don't get all rabid about the games. My main plan for the day is watching older daughter's dogs while she's off to Colo with a friend. I really don't mind - they're good mutts. For now, Flop Ears and I are being quiet so wifey can sleep in. SW

    Wife sleeping in--perhaps you're too quiet. The smell of brewing coffee is good to wake up to also.

    Gotta admit, as far as football goes college ball is full of rivalry and kids wanting to do the best they can to be selected into the overpaid world of the NFL. They're not really concerned about getting an education. Pro ball or the NFL is mostly just an occupation. I watch a little of both but like the college vs college types best.

    Since many of us went to a college, whether it had a football team or not, you can see where the interest may come from.

      I like the CFL, mostly for the home-town Bombers.
      Up and down season for them this year.
      Our 3 down game is somewhat more aerial than the NFL stuff.
      Winnipeg is hosting the Grey Cup game this year, and it would be nice to see the Bombers in it.
      They kick off at 3 c/t against Montreal for the final regular season game.
      Play-off position is a bit more iffy than what we would like, but we'll see after this afternoon's game.

        wife is a UR (university of Richmond) so keeps up with it,
        I went to VCU for a good bit, and they are still undefeated

        mainly due to no football team,



        today was a rare day off, (well sorta, did answer the phone a few times)

        hit the farmers market today, bit chilly, so the half dressed lesbians and hippy's were not as thick as usual,

        just got thru baking some Gluten Free Garibaldi biscuits (cookies) and an apple cake

          I need to look into a better source of gluten free bread. Currently I'm buying what WM offers which isn't much. We have a local bakery that I haven't checked with yet.

          Bread (real bread) doesn't have much flavor but I still miss not being able to have it. A PB&J sandwich just isn't the same w/o bread.

            it is hard , and honestly impossible, to find a GF bread that is like a loaf of plain white bread,

            it is all just a bit dense, or slightly off taste, (due to ingredients)

            the wife likes Canyon Bakehouse, for stare bought stuff,

            I can make a decent french toast out of it,
            and she has been GF for almost 20 yrs, (Celiac, or sorts, not a diet choice) and can tolerate it,

            we have tried home made loaf bread, but it is all still quite dense,

            I have ''perfected'' some sweets, like Cinnamon Rolls, pies and cakes, that are still different than the wheat flour versions, but actually in most cases better

            look at Bette HAgmans Vinegar pastry crust for most pies,

            Namaste does a fantastic pizza crust mix ( a bit herby, but great fresh out the oven)

            also Bette Hagmans feather light cake mix (mix of 3 GF flours, Mayo and sour cream,) os a damn good base for a cake mix,
            just be careful, I have noticed in most instances , to use 1/2 or 2/3's the amount off Xanthum gum in the recipes, cause they can get a bit rubbery, (the gum replaces gluten to hold things together),, however if you don't use it , the bake turns out crumbly

            FWIW store bought mixes are ok, but not great

            one for one flour, works well too for some recipes (I used it tonight for the apple cake recipe) but sometimes, depending on brand, it has the Xanthum or Guar gum added, and can be too much

            if you have an Aldi's in your area, there GF stuff is generally pretty good, esp the chicken nuggets and when you can find it , the fresh and frozen pastas

              The Canyon Hawaiian is what I buy. Hawaiian because it is sweetened and that hides the awful taste a little. I bought some GF flour that I haven't tried yet.

              Odd, I can eat a slice of common white bread every so often, pizza, or pasta as long as I limit myself. I looked up being yeast intolerant (same symptoms) and that may be my case instead of gluten (who knows?). As it is I stay off of it but if I want pizza or a cheeseburger I go for it w/o any repercussions.

              We do have a new Aldi's w/i about 15 miles. Haven't been there yet.

                    Whatever it is it looks good.

                    My wife stays off the sugar and doesn't eat/like/trust the sugar substitutes so baking dessert types would be just for me. With my heart problems I'm suppose to stay away from sugar, salt, spicy foods, and anything with any taste or food value.

                    My recommended diet (heart) consist of about only nuts and berries and the nuts can't be salted. I may as well be chained to a tree out in the woods like a wild animal. Of course I don't stick with my diet very strictly (who would?)

                      first are Garibaldi's, basically a short bread kinda cookie with currants in them,
                      not much sugar in them,


                      the second is an apple cake,
                      it has a cup of sugar, and 4 large apples, , and cream cheese icing, so just a tad sweet, like most cakes, but not go grab the insulin sweet,

                        Insulin. There's an idea. If food companies started making cane sugar with insulin added it could be eaten by many of us. Tooth decay would still be an issue though.

                        Good thing I'm not a doctor. Wish I could say that about most of the "doctors" we do have here.

                        I suppose one thing that makes that apple cake good is that the apples add moisture. Cakes are traditionally dry. My mother had a recipe for chocolate cake with beets. The chopped up beets presented no flavor but added moisture to the cake.
